Chipotle Sweet Potato and Black Bean Hash with Guacamole
Up next for my menu for the Big Game is a hearty, tasty and healthy sweet potato and black bean hash topped with a simple guacamole for breakfast to ensure that you start the day off right! (Although I will be making this for the big game it is perfect any time of the year!) This hash is super simple to make, it starts with bacon (omit for vegetarian), followed by onions, garlic, cumin, chipotle chili powder, the sweet potatoes and finally the black beans before being topped with a simple guacamole. The key to a quick cooking time is to dice the sweet potatoes small as the larger the sweet potato cubes are the longer it will take to cook them until tender. I like to keep things simple and go with an avocado topping with lime juice and salt but if you want something a little more complex you can go with a more robust guacamole. Of course pretty much everything is better when topped with a fried egg so I like throw some on as well and that gives me a trio of my favourite foods: bacon, eggs and avocado all on a tasty bed of sweet potato and black bean hash! Feel free to add any other extras like sour cream, salsa, cheese, etc.

Taco Salad
During the summer I often like to have salads as light meals and one of my favourites is a taco salad, which as the name implies has all of the flavours of tacos! This salad is a great way to finish off any leftover ingredients from taco night though I am usually too impatient to wait and just make it from scratch starting out with a homemade taco seasoning. This recipe is very flexible where you can use whatever your favoutite taco ingredients are and I generally like to pack the salad with plenty of healthy ones like beans, corn, tomatoes and avocado before moving onto things like cheese, Greek yogurt and salsa. Although a number of salad dressing would be perfect on this, I usually go with salsa verde as a dressing. As far as salads go this taco salad certainly makes for one tasty, light and satisfying meal meal!

75 Cinco de Mayo Recipes

Cinco de Mayo is right around the corner!

Cinco de Mayo is a day celebrated in both the US and in Mexico. In the US it originated with Mexican-American communities in the American West as a way to commemorate the cause of freedom and democracy during the first years of the American Civil War and it has since spread. In Mexico the day commemorates the Mexican army's victory over French forces at the Battle of Puebla on May 5, 1862. Celebrations in the US typically include Mexican-American culture, food, music and dancing.

Mexican cuisine is definitely one of my favourites and Cinco de Mayo is the perfect excuse to pull out some of my favourite Mexican dishes and to try a few new ones! I am kicking things off a little early this year by testing some new recipes and gathering up a list of some of my favourite Mexican dishes and Mexican inspired dishes to share with you! I must apologize for the length of this list, there are just so many great options starting from breakfast or brunch, to snacks, main courses and sides and lets not forget plenty of salsas, tacos and quesadillas! You really can't go wrong celebrating Cinco de Mayo with tasty food and each of these recipes are sure to please!

Irish Nachos with Guinness and Irish Cheddar Sauce
I hope that there is time for one last recipe for St Patrick's Day and this one is a good one, Irish nachos in a Guinness and Irish cheddar sauce! Irish nachos are pretty much your regular nachos only they are made with home made potato chips, in this case crispy baked potato chips. The most important part of these nachos is of course the Guinness Irish cheddar sauce or fondue which allows you to get some Guinness right into your meal in addition to washing the nachos down with a pint! The sauce is pretty much a bechamel sauce where the liquid is Guinness which the Irish cheddar mellows out giving you a creamy and tasty sauce. Next up is the meat and I like to go for a spicy Mexican chorizo but any sausage will work and chopped up corned beef or even bacon would also be perfect. From there you can add your favourite nacho toppings and I like fresh tomatoes, onion, avocado, sour cream and cilantro. The perfect pub food for your St Patrick's Day celebration!

When I made the spinach and artichoke dip tortellini soup the other day I realized that it had been a while since I had last used tortellini and that reminded me that I had several recipes bookmarked to try including this chili tortellini from Picky Palate. Adding cheese stuffed pasta to an already tasty dish like chili is a fabulous idea and I could not resist making it! In addition to being super tasty, this chili tortellini is easy to make, it only takes about 30 minutes and it's made in one pot! You pretty much just need to cook the onions, brown the meat, throw everything in the pot and simmer until the tortellini is ready! This chili is perfect for a quick work night meal and a great way to enjoy some tortellini!

It looks like I have the time to share one final recipe idea for watching the big game today, a cheesy chicken enchilada dip! This dip is super easy to make and it starts out with chicken and a tasty homemade enchilada sauce, though you could use store bought to save some time. You can fill this dip out with your favourite enchilada fillings and I like to go with some healthier ingredients including corn and beans before moving on to plenty of cheese! You simply mix all of the ingredient, bake until the cheese has melted and then it's time to dig in with tortilla chips, crackers bread or your favourite scooping items.

Quinoa White Chicken Chili
It is definitely the season for soups and stews and you really can't go wrong with a tasty, warming bowl of chili! In it's more typical form chili con carne is made with beef and plenty of red chili peppers but it is always fun to make a white chili where the meat is chicken and no red chili peppers are used. This is my go to quick, easy and tasty white chicken chili recipe and it has a base of chicken and white beans with jalapeno chili peppers for the heat along with a few seasoning like garlic, cumin and oregano. I like to kick the flavour up a bit by replacing some of the broth with a salsa verde and the addition of quinoa makes this soup a bit heartier. As a finishing touch I like to hit the soup with fresh lime juice along with some cilantro. One of the best things about this tasty white chicken chili is that it only takes about 30 minutes to make and if you know that you aren't even going to have that much time for dinner then you can throw everything into the slow cooker in the morning and come home to a fully cooked meal!

Pumpkin Chorizo and Black Bean Soup
I can't believe that October is almost over and that means that the pumpkins will soon disappear so I wanted to get at least one more pumpkin recipe in and this time it's a pumpkin soup that is perfect for the cooling weather. Really this soup is just a combination of two of my other favourite pumkin soups the pumpkin and black bean soup and the pumpkin and chorizo soup but despite it's simplicity it is super tasty! I mean you really cannot go wrong combining pumpkin with black beans and spicy Mexican style chorizo sausage in a warm and hearty soup! This soup has it all, the pumpkin and partially pureed black beans make it nice and thick and creamy, the chorizo sausage and remaining black beans give it a nice hearty texture and the chipotle chilies in abobo make it nice and smoky and give it a healthy amount of spicy heat to keep you warm! This pumpkin, chorizo and black bean soup is a great way to enjoy the last of the pumpkins this season and a great way to keep warm in these cooling days!

Pork Tinga Quesadillas
I have been on a quesadilla kick lately so when I made the pork tinga tacos the other day I made sure to make a large batch of pork tinga so that I would have leftovers for quesadillas. At it's base a quesadilla is simply melted cheese in a toasted tortilla so I kept these quesadillas nice and simple filling them with the pork tinga along with the cheese. Although these quesadillas are great just like that, while I was enjoying one I could not help but think that I could make them even better with the addition of some avocado. Instead of just throwing some avocado into the quesadillas or serving them with mashed avocado for dipping I decided to go with something a little different and I treated the quesadillas like a base and topped them with an avocado spread, almost like a pizza. Of course I could not stop there and I mixed some salsa verde into the mashed avocado and sprinkled on some diced onions, crumbled cotija cheese and fresh cilantro. I have to say that these 'pizza' like quesadillas were certainly fun to eat and so amazingly good! The cool and creamy avocado topping plays beautifully well with the spicy chipotle pork tinga and all of the melted cheesy goodness!

Up next for my roast turkey leftovers was a hot brown sandwich which I had been wanting to try for a while. The hot brown sandwich is a take on welsh rarebit where toast is served topped with roast turkey, tomato, bacon and a mornay sauce that is broiled until the mornay sauce is bubbling and golden brown. While I was researching the hot brown sandwich I came across the idea of a Texmex style hot brown sandwich on Homesick Texan which sounded much more interesting than the original and I just had to switch tracks and make it instead! This Texmex style hot brown uses a mornay sauce that is spiked with green chilies and it is topped with tomatoes, bacon, guacamole and crumbled cotija cheese and it makes for one really tasty meal! If you are looking for a way to enjoy some of your roast turkey leftovers you really cannot go wrong with this Texmex style hot brown sandwich!

Pumpkin and White Bean Turkey Chili with Kale and Pepita Salsa
Up first for my new pumpkin recipes this season is a light, tasty and healthy pumpkin turkey chili with white beans. This pumpkin chili is nice and simple and it includes the pumpkin in the form of pumpkin puree along with a hint of pumpkin pie spices which work really well with the smoky chipotle chili heat. All said and done this chili really only requires about a half an hour of active time followed by some simmering making for a relatively low effort meal.

I always like to try to include green vegetables in my meals and I did so here by topping the pumpkin turkey chili with a fresh kale and pepita salsa. The kale and pepita salsa could not be easier to make, you simply puree some raw kale along with cilantro, jalapenos, pepitas and lime juice in a food processor and it is ready to go. I have to admit that I was eating this kale and pepita salsa by the spoonful before it even made it to the dinner table; I will definitely be making it a lot more over the next few weeks!

Chipotle Lime Grilled Shrimp and Corn Guacamole Mini Tostadas

This weekend I was looking for some appetizers and since it's summer I wanted to use the grill! Grilled shrimp was on my mind and although it's always a pleasure to eat it right off of the stick I was thinking that it would be nice to serve it on little bite sized tostadas. (Tostadas are crispy fried tortillas that are topped with food that is often held in place with a base of guacamole or refried beans.) Of course with all of the fresh corn around I was not just going to make any plain old boring guacamole but a corn and cotija guacamole and since the grill was going to be fired up the corn would be grilled first. Not surprisingly these bite sized chipotle lime grilled shrimp and corn guacamole tostadas disappeared quickly this weekend and I know that I will be making them again soon!

Pesto Grilled Shrimp Caprese Quesadillas

After making the absolutely addictive pesto grilled shrimp the other day I had to make some more and this time instead of just eating it from the stick I wanted to use it in something, quesadillas! I have been on a quesadilla kick lately and I could not help but think that the pesto grilled shrimp would be amazing in some caprese salad inspire quesadillas with plenty of melted fresh mozzarella and tomatoes along with some extra pesto and drizzle of balsamic reduction! In general these flavours work magically well together and it is especially true in quesadilla form! I will definitely be enjoying a few more of these quesadillas in the next few weeks!

BBQ Ham, Bacon and Pineapple Quesadillas (aka BBQ Hawaiian Pizza Quesadillas)

During the summer I naturally tend to eat a lot more fruit and I often like to try to use it in one of my food obsessions, dishes with plenty of hot melted ooey gooey cheese like grilled cheese sandwiches or quesadillas. I have been enjoying a lot of pineapple these last few days and that had me thinking about fun new ways to use it and the one idea that really stuck with me was to use it in another pizza quesadilla! Hawaiian pizza is one of those pizzas where you either love it or hate it with its use of sweet and tangy pineapple on a pizza along with salty ham and smoky bacon and I am firmly in the love it category so Hawaiian pizza quesadillas were on the menu!

A Hawaiian pizza quesadilla recipe pretty much writes itself, I mean you just take the Hawaiian pizza ingredients, throw them into a tortilla and toast them up until all melty and good but that just wasn't quite doing it for me... Although I do not hold to it all the time, I feel that a quesadilla should include some spicy heat and the basic Hawaiian pizza quesadilla was simply lacking in this regard! After some careful consideration I decided that the best way to add some heat to the quesadillas was take a note from the BBQ chicken pizza to replace the boring old pizza sauce with some sweet and spicy BBQ sauce and I also threw in some jalapeno peppers for good measure! The use of the BBQ sauce in the quesadillas put grilling on my mind so I grilled the pineapple to tenderize and caramelize it, bringing out its natural sweetness.

Isn't summer great? Fresh fruit? Check! Plenty of ooey gooey melted cheese? Check! Mmm...

Chipotle Lime Shrimp and Avocado Dip with Tomatoes and Charred Corn

I am always looking for tasty new dips and I am a big fan of shrimp so when I came across the idea of a taco shrimp dip on Jeanettes Healthy Living I was enthralled and the ideas started to spin in my head! There are a lot of ways that you could go with a shrimp taco dip but the one that fascinated me the most was combining spicy and smokey chipotle lime shrimp with a cool an creamy guacamole. Although I could have stopped there and the chipotle lime shrimp guacamole would be super tasty I could not stop thinking of a seven layer dip and how juicy tomatoes and sweet corn would add new layers of complexity and depth of flavour to the dip. Instead of just adding the corn raw I charred it in a cast iron skillet to bring out even more of its natural sweetness. You could serve this dip all mixed up but I decided to go with layers so that you could see all of the ingredients and I placed it in small bowls that were perfectly sized for individual servings! The cool and creamy guacamole, spicy succulent shrimp, juicy tomatoes and sweet corm are an amazing combination of flavours that combine to make a totally irresistible dip that is pretty healthy to boot!

Taco Grilled Cheese Sandwich

This will be the last new grilled cheese for the National Grilled Cheese Month and it is possibly the tastiest, the taco grilled cheese. The basic idea is to take all of the flavours of taco night and stuff them into one rather large grilled cheese sandwich! This sandwich starts with some taco seasoned ground beef made with a homemade taco seasoning and then it continues with the classic taco toppings including salsa, lettuce, tomato, sour cream, guacamole and it is of course finished with plenty of melted cheese! With all of those ingredients this is one large sandwich and with the salsa, sour cream and guacamole in there it can be one messy sandwich. Feel free to omit the salsa and sour cream from the sandwich and serve them on the side for dipping and it is also fun to serve this grilled cheese topped with them along with the guacamole and eating it with a knife and fork. This sandwich is definitely a nice way to celebrate the upcoming Cinco de Mayo in grilled cheese style!

Chicken Fajita Grilled Cheese

Up next for National Grilled Cheese Month is a sandwich that is inspired by both a bar room staple and plain old family fun meal, chicken fajitas! Chicken fajitas are seasoned, grilled chicken, sauteed peppers and onions served with fresh tortillas and condiments like shredded cheese, salsa, guacamole, and sour cream. The ingredients for chicken fajitas are typically served separate at the table so that you can construct your own, the way you like it, and who doesn't like to make their own meal at the table? These fajitas grilled cheese are not served to construct 'as you like' at the table but you can certainly make them 'as you like' by filling them with what you want from just the seasoned grilled chicken and sauteed peppers and onions to fully loaded with the salsa, guacamole and sour cream. I like to fill the sandwich with just the seasoned grilled chicken and sauteed peppers and onions and serve it with the with the salsa, guacamole and sour cream on the side for dipping but loading them all up into the grilled cheese is also good! The next time you make chicken fajitas, make a double batch so that you can make these chicken fajita grilled cheese sandwiches for lunch the next day or forget waiting and just make a batch for these grilled cheese sandwiches!

Sweet Chili Chicken and Avocado Enchiladas

Ever since I made the Thai inspired sweet chili chili dressing it has been haunting my dreams and I have been obsessing about using it again! Really this sweet chili dressing is addictive enough to eat by the spoonful or even drink by the bottle full but I wanted to use it in another recipe and enchiladas sounded like the perfect option! I was thinking that chicken and sweet chili would be an amazing combination for enchiladas, I mean you really cannot go wrong with smothering chicken in a tasty sauce, wrapping it in tortillas, and drowning it in melted cheese! I did however want to fill the enchiladas out a bit and cool and creamy avocados were and excellent way to do so! The sweet chili sauce and melted cheese combo works surprisingly well together in these chicken enchiladas and the avocados bring bring everything together!

Tequila and Lime Jalapeno Cranberry Sauce
No holiday turkey dinner is complete without some homemade cranberry sauce and since it is so easy to make at home you really have no excuse not to! Although a basic cranberry sauce is amazing all by itself, you can change things up every once in a while by adding various flavoura and this time I went with a Mexican inspired flavour theme with spicy jalapeno peppers, lime and a hit of tequila. The heat provided by the jalapeno peppers goes well in the sweet and tart cranberry sauce making it little like a salsa and the lime juice really brightens it up!
