Crispy Honey Lemon Cauliflower on Chili and Garlic Stir Fried Zoodles
After recently making the crispy parmesan cauliflower bites I could not help but think that crispy cauliflower could be used in other recipes and the thing the that stuck out in my mind was using it to replace the meat in a Chinese style dish like honey lemon chicken. Normally when I am making a Chinese style dish where the meat is coated and fried until crispy I take a lighter approach and use simple sauteed meat but since the meat in this case is actually cauliflower I thought that it would be alright to indulge a bit and go with the crispy coating. The honey lemon sauce is super quick and easy to make starring, you guessed it, honey and lemon along with some other Chinese style sauce staples including soy sauce, garlic and ginger. You will definitely never miss the meat in this dish as the crispy cauliflower is absolutely amazing in the tasty honey lemon sauce!

I served the crispy honey lemon cauliflower over a bed of zucchini noodles stir fried with some garlic and a touch of chili heat to keep things nice and light.

Cauliflower Chowder
It's time for another soup and this time it's a cauliflower chowder that is so quick, easy, light, healthy and so tasty that you'll be coming back for seconds every time! My favourite cauliflower soup is my roasted cauliflower and aged white cheddar soup where the cauliflower is pureed to make a smooth soup but it's also nice to get the texture of the cauliflower and this chowder does just that. This recipe could not be simpler, you just saute the standard three veggies, onions, carrots and celery in oil, add some flour as a thickener, add the broth and cauliflower, simmer until the cauliflower is tender, add the cream and season to taste. The recipe as written is really good but I like to kick things up a bit by adding some umami in the form of melting parmesan cheese into the chowder, adding miso paste and finally by giving into my inner bacon addiction and topping things off with some crispy bacon! This is definitely one of my new favourite soups with it being both hearty and tasty while also being light and healthy and it's also a bowl of pure comfort food that is perfect for these cold winter days!

Parmesan Cauliflower Bites
First up for my new snacking recipes for the Big Game (the NFL football playoffs) are these tasty little crispy parmesan cauliflower bites; aka crispy cauliflower popcorn! I had been seeing this recipe all over pinterest for a long time with the source being Damn Delicious and I had just been itching to try it. The recipe is super simple, you just cut the cauliflower into florets, dip them in egg followed by a mixture of panko breadcrumbs, parmesan and creole seasoning before frying them until golden brown and crispy. Normally I do not do a lot of deep frying but since I was frying a healthy vegetable I figured it would even out, though I am sure that you could also bake them if you wanted to. I have to say that these crispy parmesan cauliflower bites are amazingly good, super addictive, my new favourite snack and perfect for the Big Game!

Roasted Cauliflower, Mushroom and Goat Cheese Quiche with Quinoa Crust
I have really been enjoying the cauliflower and mushroom combo lately, especially if they are roasted, and I thought that it was about time that I used them in a breakfast dish and a quiche is the perfect way to do it! I wanted to keep things on the lighter and healthier side so I started out with a quinoa crust, which is easy to make, you simply mix an egg and possibly some cheese into the cooked quinoa, press it into a pie plate and pre-bake it before filling it and baking it again. From there I roasted the cauliflower and mushrooms and added the usual quiche suspects, eggs and cream, along with some goat cheese, since a quiche just isn't a quiche without cheese! (Aged white cheddar or blue cheese would also be amazing in this quiche!) The cauliflower and mushroom combo works amazingly well in this quiche and now I can enjoy my favourite combo for breakfast lunch and dinner!

Spinach and Feta Mashed Cauliflower
I know I seem to say this a lot but I can't believe that it is fall already and what's more is that this weekend is the Canadian Thanksgiving already! With that in mind I just had to share some Thanksgiving recipe ideas and since creative side dishes are what I enjoy most about a Thanksgiving feast I started with this spinach and feta mashed cauliflower. Mashed cauliflower is a healthy and light alternative to mashed potatoes and when you jazz them up with things like spinach and feta they become an absolute delight that could easily outshine the main on your dinner plate. The flavours in this mashed cauliflower are based on spanakopita a Greek spinach and feta phyllo pie with fresh herbs like dill and green onions. Normally mashed potatoes are made nice and creamy with the addition of heavy/whipping cream and/or sour cream, cream cheese and loads of butter but I went with creamy Greek style yogurt and a touch of butter to keep things lighter. Whether you are serving this spinach and feta mashed cauliflower at a Thanksgiving dinner or just any old weeknight dinner, they are super quick and easy and just packed with flavour!

I have been a little bit obsessed with the idea of cauliflower 'rice' ever since I came across it! I have used cauliflower rice in a number of recipes that I have shared with you and I think that it warranted sharing a basic version that can be used in pretty much and dish that calls for rice. Cauliflower rice is basically cauliflower that has been 'riced' by grating into small rice like pieces and sauteed until it is lightly golden brown on the outside and nice and tender on the inside. Although cauliflower rice does not have the exact same texture as rice it is a light, healthy, low carb and tasty alternative and it's a great way to sneak an extra vegetable into your meal!

Whenever I make a tasty Mexican style meat like chicken carnitas I like to make extra to ensure leftovers for things like quesadillas and burrito bowls! Burrito bowls are essentially burritos that are served in bowls minus the tortillas and they are super easy to make! Typically a burrito bowl will start off with rice, but a lighter alternative is a cauliflower rice, followed by beans, vegetables like lettuce and tomatoes, and then finished off with things like guacamole, sour cream, salsa and cheese. Although you can go overboard filling out a burrito bowl it is pretty easy to keep them nice and light, healthy and satisfying and this burrito bowl does it with style! Forget waiting for leftovers! I am going to make another batch of chicken carnitas for more burrito bowls now!

With Cinco de Mayo right around the corner I have been thinking about Mexican food a lot lately. Ever since I used cauliflower 'rice' in the chicken fried cauliflower rice I have been contemplating other ways to enjoy it! Of course one of the first things that came to mind was cilantro lime rice, one of my favourite Mexican side dishes, which takes boring old rice and gives it new life by infusing it with a hit of fresh cilantro and lime juice! This cilantro lime cauliflower rice is addictively good and so easy to make! You simply rice the cauliflower, saute it until tender and mix in the cilantro and lime! The next time you are making rice for your Mexican themed meal make some lighter and healthier cilantro lime cauliflower rice instead!

Roasted Cauliflower and Mushroom Carbonara
Carbonara is an Italian pasta dish consisting of egg, bacon, fresh cracked black pepper and cheese and I am a huge fan of it; it's so quick and easy to make and so amazingly good! One of the things that I like about it is that you can easily add things, like vegetables, and I figured that it was past time to make a carbonara with my new favourite vegetable, cauliflower. Of course, I could not resist roasting the cauliflower to give it that caramelized flavour and I also brought cauliflowers best fried, mushrooms, to the roasting pan! Once the vegetables are roasted you really just need to cook the bacon (I used pancetta this time) and pasta and toss everything together! The trick to carbonara is that you want to mix the egg sauce with the hot pasta, bacon and pasta water so that the eggs 'cook' without scrambling, which is actually pretty easy! This roasted cauliflower and mushroom carbonara might just be my favourite carbonara yet!

Chicken Fried Cauliflower Rice
I always enjoy tasty Chinese takeout but it's also great to make at home! One of my favourite dishes has to be fried rice and it's super easy to make! Something that I have been enjoying lately with my fried rice is replacing the main ingredient, the rice, with 'riced' cauliflower; basically cauliflower that has been grated so that it is in small rice sized pieces. One of the great things about fried rice is that you can throw in pretty much anything that you like and this recipe is a pretty standard one that starts out with Chinese sausage or bacon, chicken, a bunch of vegetables, the cauliflower rice and some seasonings. A great tip for making fried rice is to have everything ready and on hand before you start cooking as things move quickly once you start and for cauliflower fried rice you don't want to over cook the cauliflower or it will get mushy. I have to say that cauliflower makes and excellent alternative to rice in fried rice that is lighter and healthier without all of the carbs!

With the cold weather here I have been craving comfort food and one of my favourite comfort food dishes is the pepperoni pizza casserole. Although I will never cease to enjoy digging into a plate of this casserole it is a little high on the calories and the carbs so I thought that I would make a new, lighter, version using cauliflower as the base rather than pasta. This casserole is super easy to make, you simply cook the cauliflower, and I like to roast it since it add that caramelized flavour, mix it with some pizza sauce and your favourite pizza toppings, top it with cheese and more of your favourite toppings and bake it until it is golden brown and bubbling. With all of the different toppings to choose from this cauliflower pizza casserole will never get boring and you can't go wrong with the classic pepperoni topping!

Soup season is definitely here and do I ever have a tasty one to share with you today, a creamy roasted cauliflower and red pepper soup! The original idea behind this soup was for a creamy roasted red pepper soup but I figured that I would keep things a little on the healthier side by using pureed cauliflower to add the creaminess and to help thicken the soup up a bit. Roasted red peppers and cauliflower are a great combo and another thing that I like to combine with roasted red peppers is tangy goat cheese which also further adds to the creaminess of the soup. Like a lot of great soups, this one is super easy to make where you really just need to roast the red peppers and cauliflower, saute some onions, add the broth and goat cheese, and heat up before pureeing. I added one final touch to the soup and that was a bit of paprika to add a hint of smokiness!

Mushroom Lasagna Roll Ups in Creamy Gorgonzola Cauliflower Sauce

I have been seeing cute lasagna roll-ups around the internet for a while now and I have been wanting to try making some. The lasagna roll-ups are basically just lasagna where instead of layering everything you place the filling on top of the noodles and then roll the noodles up, top them with the sauce and cheese and bake them. I knew exactly what I wanted to do for my lasagna roll-ups, a mushroom and kale lasagna with creamy white sauce.

For the filling I went with some easy sauteed mushrooms and kale along with some parmesan mixed into ricotta cheese and some of the creamy white sauce. I wanted to try something new for the white sauce, I wanted to try a cauliflower based sauce rather than a more traditional, calorie filled, bechamel sauce made with flour, butter and milk or cream. The cauliflower sauce is simply pureed cauliflower and cheese along with enough liquid to smooth it out into a sauce. For the cheese in the cauliflower sauce I went with gorgonzola, a blue cheese, but it would also work well with parmesan, romano or asiago among others. Since this is a lasagna I was bound to top the whole thing off with even more cheese, this time in the form of mozzarella. (For those of you keeping track, yes, there are no less than 4 kinds of cheese in this lasagna!)

I knew that this lasagna was going to be amazing just thinking about all of the ingredients and it easily lived up to my expectations and then some! The mushroom and kale lasagna in creamy gorgonzola cauliflower sauce was amazing! I have to say that the cauliflower sauce was no less than spectacular and it went so well on the lasagna! I will definitely be using this cauliflower sauce again! Luckily this recipe makes a lot so I will be able to enjoy the leftovers for lunch this week.

Two of my recent food obsessions have been quinoa and cauliflower and it was past time for me to use them both in a dish together! Another thing that I have been enjoying lately is whole grain salads where the recipes follows some basic guidelines including starting off with quinoa or a whole grain like farro, a vegetable or two, possibly some beans and/or nuts, a cheese and a dressing. As soon as I had the idea of using quinoa and cauliflower together one of these salads sounded like a great way to go! Of course I had to go with roasted cauliflower since it is so addictively good and I figured that I might as well roast some mushrooms up at the same time. For this salad I decided to omit any beans but I did throw in some walnuts and a balsamic vinaigrette. Which cheese to use was the only real question as there a few good options including feta, blue cheese and the one that I chose, a creamy goat cheese. Goat cheese is a particularly nice option for salad like this because if you add it to the salad while the ingredients are still warm, it starts to melt into the salad spreading it's goodness throughout. This salad goes well either warm or cool and it makes for a nice side or even a light meal. If you want to bulk it up a bit for a meal you can add some chickpeas and serve it on a bed of greens such as kale, spinach or lettuce. I have to say that the roast cauliflower, mushroom and quinoa combo was a nice and tasty one and healthy to boot!

Roasted Cauliflower Satay with Spicy Peanut Dipping Sauce

I have been a huge fan of roasted cauliflower ever since I first tried it! There is just something about roasted cauliflower... roasting it takes something that is pretty boring and transforms it into something that is extraordinary. Even in it's simplest form, tossed in olive oil with salt and pepper, it is ridiculously addictive and I could easily chow down on a bowl of it rather than popcorn while watching a movie. The only real question is, why stop with salt and pepper when you could add any number of flavours or seasonings to the roasted cauliflower? Buffalo roasted cauliflower as to be one of my current favourites but I have plenty of ideas for roasted cauliflower starting with this chicken satay inspired one. The basic idea behind this roasted cauliflower was to marinate the cauliflower in a satay style marinade, roast it and then serve it with a Thai style spicy peanut sauce for dipping. I was a little worried that marinating the cauliflower might cause problems with roasting but it works quite well with the cauliflower absorbing a lot of the marinades flavour and it still roasts up perfectly. This satay roasted cauliflower is super tasty all by itself but the peanut sauce takes it to a whole new level of amazingness!

If you are lucky enough to still have any leftover corned beef, I have one more tasty way for you to enjoy it; in a reuben style corned beef and cauliflower hash. This hash has all of the flavours of a reuben sandwich including the corned beef, sauerkraut, melted swiss cheese, russian dressing and caraway seeds for the dark rye bread flavour. This dish could of course be done with the more common potatoes but I wanted to lighten it up a bit and went with cauliflower this time as it does amazingly well in hash! This might just be one of the easiest and tastiest ways to enjoy some leftover corned beef for breakfast!

I have been wanting to try making a pizza with a cauliflower crust ever since I came across the idea on Recipe Girl; I mean what's not to like about a cauliflower crust for a pizza? I actually got a chance to try a cauliflower crust a couple of months ago but I ran into a problem, the crust stuck so badly to the parchment paper that I could't get it off. What bits that I could get off tasted great though so I was determined to get it right! After hours of going through comments on various cauliflower pizza crust recipes the secret seems to be that you need to squeeze out as much of the liquid as possible from the cooked cauliflower before baking it. As sometimes happens this project fell through the cracks and I forgot about it until the holidays when I picked up a silicon baking mat and it practically had the cauliflower crusts name written on it. I tried the recipe again, this time squeezing out the excess liquid and using the silicon baking mat, and the crust came out beautifully and just as tasty as expected! This crust is seriously good! I could easily eat the crust all by itself as a snack or maybe with a dipping sauce not to mention all of the tasty pizza topping options!

Roasted Cauliflower and Aged White Cheddar Dip

I have really been into cauliflower lately and in particular I have been enjoying a lot of bowls of the roasted cauliflower and aged white cheddar soup which have been keeping me warm on these cold winter days. With the big game coming up I have had snacks on my mind a lot and one of my favourite snacks for for any kind of party has to be hot melted cheese dips like the spinach and artichoke dip. The other day while I was enjoying a bowl of the roasted cauliflower and aged white cheddar soup I was thinking about dips and I had a crazy idea, why not combine the two ideas and make a hot melted cheesy cauliflower dip? The recipe for the dip is pretty easy, you just need to roast the cauliflower, puree it, mix in the cheese and then bake it until the cheese is all melted, bubbling and golden brown. I have to say that this dip is another reason to love cauliflower!

Roasted cauliflower has to be one of the most addictive healthy snacks around and it only gets better when coated in buffalo hot sauce! This spicy treat would be a perfect option for a lighter and healthier snack for your party for the big game! Not only does it taste great but it is as easy to make as roasting the cauliflower and tossing it in the buffalo hot sauce so you can be licking your fingers clean in as little as 30 minutes! Just like buffalo chicken wing, this buffalo roasted cauliflower goes great with a tangy blue cheese sauce for dipping and some crunchy celery sticks to help tame the heat!

Garlic Mashed Cauliflower
For my pan seared chicken breasts in a mushroom, tarragon and mustard pan sauce dinner I want to serve it on top of something that could soak up all of that amazingly tasty sauce! One of the first things that normally comes to mind at times like this is mashed potatoes but I have really been into cauliflower lately and I have been wanting to try mashed cauliflower for a while! The mashed cauliflower is pretty much the same as mashed potatoes except that it is made with cauliflower instead of ptoatoes. You pretty much just steam the cauliflower until tender, mash it and mix in seasonings and flavours of choice. Since the sauce was the star of the show for my dinner, I wanted some pretty basic mashed cauliflower with little or no flavour to overpower the sauce so I went with a basic garlic mashed cauliflower with butter, sour cream, salt and pepper and a touch of miso paste for umami. Really you could mix in whatever flavours you wanted and you could easily do any mashed potato recipe with mashed cauliflower. I am already thinking about an aged white cheddar mashed cauliflower for next time!
