Strawberry Basil Lemonade

With summer here it is time to start looking for ways to keep cool on the steadily hotter days and what better way to do so than with a cool and refreshing glass of lemonade? Instead of running out to the store to get some, how about making your own? Trust me, it's dead easy; it's simply lemons, sugar and water along with about five minutes of effort and the results are so much better than 'from concentrate'! Bored with plain old lemonade? Try adding something to it like one of the many ripe, in season summer fruits or berries like strawberries! As exciting as a fruity lemonade is how about making it even more interesting by adding a fresh herb like basil or mint? This strawberry and basil lemonade is so easy to make from scratch at home and it is sure to keep you cool, hydrated and refreshed on the hot summer days to come!

Summer is going to be so good!

Blueberry lemonade anyone? Blackberry? Peach? There are just too many options to choose from!

Roasted Strawberry Shortcake Shake

When I made the strawberry shortcakes earlier in the week I made sure to make a double batch of the shortcake so that I would have some leftovers to use in something else. I came across the idea for roasted strawberry shortcakes on Spoon Fork Bacon not too long ago and I really liked the sound of using the classic flavours of strawberry shortcake in a cool and refreshing drink that would be perfect on a hot summer day. This drink starts out with your basic milkshake ingredients including the milk and the ice cream and then it moves on to add some strawberries and actual shortcake! Yep, you heard me right, big chunks of shortcake are added to the shake and then it is pureed in the food processor leaving tiny bits of cake in your shake! The next part that really makes this treat is that the strawberries are roasted first to concentrate and bring out all of their flavour just packing the shake with strawberry goodness! Right now I am going to enjoy this really cool shake but up next, I think it is going to have to be roasted strawberry shortcake ice cream!

Caramelized Pear, Chocolate and Goat Cheese Smoothie

I am not really all that big on smoothies but when I came across the idea of using a creamy and tangy goat cheese in one, I was definitely intrigued! The recipe that I came across was one for a caramelized pear, chocolate and goat cheese smoothie on The healthy Foodie and the combination of flavours in the smoothie sounded out of this world! You start out by roasting some pears in the oven to caramelize them which concentrates their flavour. The roasted pears are then pureed into the base of the smoothie, some milk and Greek yogurt along with the goat cheese, some cocoa powder and cardamom. I also wanted to sweeten things up a bit so I added a touch of honey to the mix. I have to say that the goat cheese worked really well in the smoothie and the flavours played well with the sweet roasted pears and the chocolate. As I was enjoying the smoothie I could not help but think about how much I like the pear and blue cheese combo and I think I might try the blue cheese the next time that I make this smoothie just to see how it works.
