Roasted Broccoli, Ham and Cheddar Grilled Cheese
Up next for my leftover Easter ham is something nice and simple and yet oh so good, a grilled cheese sandwich; pure comfort food! Ham and cheese is a fabulous and broccoli and cheese is another, so why not combine the two? That's right a broccoli, ham and cheddar grilled cheese sandwich! I was not about to stop there either, I roasted the broccoli to bring out even more of it's flavour before adding it to the sandwich! I then finished the grilled cheese off with a touch of grainy mustard to give it some bite! Cheese, broccoli and ham is such a magical combination of flavours and it is perfect in grilled cheese form! If you are fresh out of leftover Easter ham you are going to have to run out and get some ham, along with the broccoli, but it is so worth it for these roasted broccoli, ham and cheddar grilled cheese sandwiches!

Moussaka Patty Melt
With the cooling weather I have been thinking about cold weather dishes more often like moussaka, a Mediterranean casserole consisting of layers of meat in a tomato sauce, eggplant and a bechamel sauce. During the summer I made some burgers inspired by moussaka and given my fascination with grilled cheese sandwiches I could not help but think that a moussaka patty melt would also be great! For this sandwich I start out with patties of ground lamb seasoned simply with a bit of garlic and cinnamon, topped with a layer of grilled eggplant, a simple and yet tasty tomato sauce and of course plenty of melted cheese! Speaking of cheese, I went with a Greek cheese, graviera, which melts well so it is perfect for grilled cheese sandwiches. When I made the moussaka burgers I used a bechamel sauce which is a bit to wet to go inside a grilled cheese sandwich but it does go great as a topping along with some extra tomato sauce!

Moroccan Chicken Manchego Melt

I must be going through withdrawal, everywhere I look I see grilled cheese sandwiches including in the moroccan grilled chicken sandwich with preserved lemon tapenade and harissa mayo! Luckily I had some of everything from the sandwiches leftover and I was just itching to turn them into a grilled cheese sandwich! With the filling already decided, the moroccan grilled chicken, green olive tapenade with preserved lemon, pickled onions and harissa, that left only the cheese and I figured that I would go with a Mediterranean cheese, manchego. As you might guess just from reading the ingredients, this is one tasty grilled cheese sandwich that is just packed with flavour and it is sure to satisfy your grilled cheese cravings!

Balsamic Roasted Cherry, Dark Chocolate and Brie Grilled Cheese Sandwich

I can't believe that it has been so long since I last made a grilled cheese sandwich! I guess I was all grill cheesed out after grilled cheese month!

With summer here I could not resist using some of the beautiful fresh fruit in a grilled cheese sandwich starting with cherries. I always enjoy the melted brie and fruit combo and it also just happens to be fantastic in a grilled cheese sandwich so it is my cheese of choice for this sandwich. Instead of throwing the fresh cherries into the sandwich I roast them a bit first to both concentrate their flavour and to remove some of their moisture, since nobody likes a soggy sandwich. Before roasting the cherries I like to toss them in balsamic vinegar which brightens them up a bit and helps bring out their flavour but brandy or port are also great options. The next component of this sandwich, a touch of dark chocolate, might be a bit of a surprise but it works so amazingly well! Chocolate and cherries were meant for each other and the duo is only made better by the addition of plenty of melted brie! Although this balsamic roasted cherry, dark chocolate and brie grilled cheese sandwich might sound a bit odd, it is a truly magical flavour combination that is pure magic in your mouth!

Is this dessert? Is it dinner? Does it matter? It's all sorts of good!

30 Amazing Grilled Cheese Sandwiches

April is the National Grilled Cheese Month and it has been full of tasty grilled cheese sandwiches but unfortunately it is coming to an end. During the last month 10 all new tasty grilled cheese sandwiches were added to Closet Cookings already rather large collection bringing the total to almost 60! With this being the last day of April I thought that it would be a great opportunity to roundup the best of those grilled cheese sandwiches and it only seemed appropriate to gather the top 30, one for every day in the National Grilled Cheese Month. It was difficult choosing only 30 but here you have them!

Taco Grilled Cheese Sandwich

This will be the last new grilled cheese for the National Grilled Cheese Month and it is possibly the tastiest, the taco grilled cheese. The basic idea is to take all of the flavours of taco night and stuff them into one rather large grilled cheese sandwich! This sandwich starts with some taco seasoned ground beef made with a homemade taco seasoning and then it continues with the classic taco toppings including salsa, lettuce, tomato, sour cream, guacamole and it is of course finished with plenty of melted cheese! With all of those ingredients this is one large sandwich and with the salsa, sour cream and guacamole in there it can be one messy sandwich. Feel free to omit the salsa and sour cream from the sandwich and serve them on the side for dipping and it is also fun to serve this grilled cheese topped with them along with the guacamole and eating it with a knife and fork. This sandwich is definitely a nice way to celebrate the upcoming Cinco de Mayo in grilled cheese style!

The National Grilled Cheese Month is coming to an end soon but I still have a few grilled cheese sandwiches up my sleeves including this tasty BBQ pulled pork grilled cheese! In my opinion it is hard to go wrong combining succulent pulled pork in a sweet, tangy and spicy BBQ sauce and then smothering it in ooey gooey melted cheese! BBQ pulled pork sandwiches are often served with the addition of a cool and creamy coleslaw right in the sandwich and I see nothing wrong with adding some to the grilled cheese version either, though it does make for a slightly messier sandwich. The next time you make some pulled pork, make a lot to ensure that you have some leftovers for these BBQ pulled pork grilled cheese sandwiches!

Chicken Fajita Grilled Cheese

Up next for National Grilled Cheese Month is a sandwich that is inspired by both a bar room staple and plain old family fun meal, chicken fajitas! Chicken fajitas are seasoned, grilled chicken, sauteed peppers and onions served with fresh tortillas and condiments like shredded cheese, salsa, guacamole, and sour cream. The ingredients for chicken fajitas are typically served separate at the table so that you can construct your own, the way you like it, and who doesn't like to make their own meal at the table? These fajitas grilled cheese are not served to construct 'as you like' at the table but you can certainly make them 'as you like' by filling them with what you want from just the seasoned grilled chicken and sauteed peppers and onions to fully loaded with the salsa, guacamole and sour cream. I like to fill the sandwich with just the seasoned grilled chicken and sauteed peppers and onions and serve it with the with the salsa, guacamole and sour cream on the side for dipping but loading them all up into the grilled cheese is also good! The next time you make chicken fajitas, make a double batch so that you can make these chicken fajita grilled cheese sandwiches for lunch the next day or forget waiting and just make a batch for these grilled cheese sandwiches!

My next grilled cheese sandwich for National Grilled Cheese Month combines two childhood favourites, sloppy joes and grilled cheese, for one really sloppy sandwich that is kid approved! Sloppy Joes are a quick and easy meal consisting of a ground meat in a sauce that is served in a bun and as its name suggests it can be a little messy to eat. I figured that you really could not go wrong taking the filling of one already tasty sandwich and throwing it into a grilled cheese sandwich with plenty of ooey gooey melted cheese and golden brown, toasty and buttery bread! This is one of those cases where taking two things results in something that is greater than the sum of its part and this is one truly tasty grilled cheese sandwich! Like the sloppy joe, this grilled cheese can be a bit messy but it is definitely worth it! The next time you make sloppy joes, make extra for sloppy joe grilled cheese sandwiches for lunch the next day!

Up next for National Grilled Cheese month is a simple grilled cheese take on the Cuban sandwich where instead of using a Cuban bun and cooking it pressed style we use bread and butter and cook it grilled style. The Cuban sandwich consists of a really tasty combo of roast pork (preferably Cuban roast pork), ham, pickle, mustard and plenty of melted swiss cheese. Although this is just a minor variation on the Cuban sandwich, it is a good one and one worthy of making an appearance National Grilled Cheese month; I mean you really can't go wrong taking an already amazing sandwich and wrapping it in toasted buttery bread.

Chicken Gyro Grilled Cheese (aka The Gyro Melt)

Up next for National Grilled Cheese month is a chicken gyro grilled cheese with all of the flavours of a chicken gyro! This is one really impressive grilled cheese containing chicken souvlaki, a Greek style grilled meat on a stick, tomato, onion, tzatziki, feta, and plenty of melted cheese, preferably a Greek melt-y cheese like kasseri. Normally gryos are made with meat that is roasted on a vertical spit but chicken souvlaki is easier to make at home and just as tasty; I mean your really cannot go wrong with grilled meat on a stick! When I had the opportunity to visit Greece a few years ago I had a few gyros and my favourite by far was a chicken one where there were roasted red peppers layered in between the chicken on the spit and since then I have always added roasted red peppers to my gyros and my gyro grilled cheese just had to have them! I have to say that this is one really tasty addition to my grilled cheese lineup and definitely worth the effort to make!

In addition to trying out some new grilled cheese recipes during National Grilled month I wanted to update a few older ones and top on my list was one of my favourites, the kimchi and bacon grilled cheese! Kimchi is a spicy fermented cabbage that works surprisingly well in a sandwich with lots of ooey gooey melted cheese! Bacon and kimchi are like a match made in heaven and I can hardly resist adding some to a kimchi grilled cheese! It actually works out kind of well since kimchi can be a little wet and since you don't want a soggy grilled cheese is is a good idea to saute the kimchi a bit to reduce the excess liquid and using a little bit of the bacon grease works perfectly!

Caramel Apple Grilled Cheese Sandwich (with Bacon)

Up next for grilled cheese month I bring you a grilled cheese sandwich inspired by caramel apples! That combo of tart juicy apples with sweet caramel sauce is simply irresistible and the the sweet and savoury apple and cheddar combo is not too far behind so why not combine the two? This sandwich is really easy to make, simply combining cheddar cheese, sliced apples and caramel sauce in a grilled cheese! The one caveat about this sandwich is that fresh apple slices tend to pop out of it when you eat it but you can alleviate this by sauteing the apples a bit to tenderize them first. It really comes down to whether you prefer the crisp apples or the ease of eating the sandwich but either way you are in apple, caramel and ooey gooey melted cheddar heaven. Although the caramel apple grilled cheese sandwich is amazing all by itself, you can make it even more decadent by adding bacon; where the salty bacon balances the tart apple and sweet caramel sauce nicely.

Bacon Double Cheeseburger Grilled Cheese Sandwich

April is National grilled cheese month! Given my obsession with grilled cheese sandwiches you can bet that there are going to be some new grilled cheese sandwiches on Closet Cooking over the next few weeks starting off with these absolutely tasty bacon double cheeseburger grilled cheese sandwiches! The idea here is to include all of the flavours of a mouth watering bacon double cheese burger in grilled cheese form. This sandwich starts out with the bacon and then it moves on to some ground beef that is seasoned with some classic burger patty flavours such as onions, garlic, worcestershire sauce and salt and pepper or steak seasoning. You can't have a burger without some condiments like ketchup and/or mustard and since you don't really want a soggy grilled cheese sandwich I add them to the ground beef and cook off some of the excess moisture. Up next is the double cheese, the cheddar and mozzarella, followed by the fresh condiments including shredded lettuce, diced tomato and pickle. (You could skip the lettuce and tomato but trust me they work well in the sandwich without wilting or making it soggy.) I have to say that these are one of my new favourite grilled cheese sandwiches and they taste just like a bacon double cheese burger, only better!

St Patrick’s Day Corned Beef Cuban Grilled Cheese Sandwich

I recently made some lechon asado (Cuban roast pork) and I used it to make some tasty Cuban style sandwiches. A reader recently suggested trying a St Patrick's Day take on the Cuban sandwich replacing the ham with corned beef which sounded really good! I am no stranger to mixing things up and one of my favourite takes on a Cuban sandwich has to be my Thanksgiving Cuban sandwich where the roast pork is replaced with roast turkey and cranberry sauce is thrown into the mix, so I needed little convincing to try the St Patrick's day version! As luck would have it I still had some roast pork in the freezer and I had just made some corned beef so I was all set to go. Normally a Cuban sandwich is made in a Cuban bun and cooked pressed but I decided to make this sandwich more grilled cheese style in golden brown crispy butter-y bread that is grilled to perfection. I have to say that the corned beef makes for an excellent substitution for the ham in a Cuban sandwich and I will definitely be making these again! Next time I think I might throw some russian or thousand island dressing and try to work in some sauerkraut and make it more of a reuben Cuban sandwich!

Bacon and Fried Green Tomato Pimento Grilled Cheese

Another fall treat is green tomatoes which make a brief appearance at the farmers market when the weather threatens to destroy the tomatoes before they ripen. Ever since I first discovered them I eagerly await them each fall and this weekend they made their first appearance. Inevitably the first thing that I do with them is to make some fried green tomatoes which is a Southern dish where slices of green, unripe, tomatoes are coated in cornmeal and fried until crispy. After an initial batch of fried green tomatoes I wanted to combine them with another Southern delicacy, pimento cheese, a combination of cheddar cheese, pimentos and mayonnaise, and make, you guessed it, a fried green tomato and pimento cheese sandwich!

I have really been enjoying all of the fresh, perfectly field ripened tomatoes a lot these days, especially in BLTs! I guess it was pretty much inevitable that at some point I would think about combining a BLT with a grilled cheese sandwich and this BLT grilled cheese, aka the BLTGC, is the tasty results of my wild musings! The recipe pretty much just wrote itself taking the buttered bread and cheese from the grilled cheese and the bacon, lettuce and tomato from the BLT and grilling it up until the outside is golden brown and all of the cheese has melted. For the bacon you could use either strips of whole slices and for the lettuce you could go with either whole leafs or shredded and you could use either whole tomato slices or you could dice them. One trick that I learned when using green tomatoes in sandwiches is that it is good to lightly fry them in a touch of bacon grease to warm and soften them up a bit which I applied to the tomato slices in this sandwich. I was kind of hesitant about using lettuce in a warm grilled cheese sandwich but it worked like a charm without getting nasty like lettuce can when it is cooked! I have to say that this BLT grilled cheese sandwich turned out amazingly well, easily as good as if not better than either of the sandwiches that gave it birth!

Bacon Jam and Avocado Grilled Cheese Sandwich

Of all the ideas that were running through my head about how to use the first of the bacon jam, the one that captured my imagination the most was of course a bacon jam grilled cheese sandwich! (Raise your hand if you knew this was coming.) Since bacon goes so well with cool and creamy avocados they were the obvious companion to the bacon jam in the grilled cheese sandwich but I wanted to add one more thing. With the word jam in the title and the bacon and avocado combo I kept thinking about breakfast sandwiches for some reason. The breakfast sandwich idea made me realize that this was the perfect opportunity to try something that I have been wanting to try for a long time, adding a fried egg to the inside of a grilled cheese sandwich!
