Over the last few years I have had some fun experimenting with different kinds of fritters. Most of these fritters have had the man ingredient as a vegetable but I wanted to try something a little bit different and make some fritters with all of the flavours of buffalo chicken and with the recent success of the quinoa fritters, buffalo chicken quinoa fritters were definitely the way to go! How can you go wrong with the flavours of buffalo chicken formed into patties and fried until golden brown and crispy?

Bacon Jam BLT

Lately the markets have been full of perfectly field ripened beefsteak tomatoes and that means that it is the perfect time to enjoy some BLTs, bacon lettuce and tomato sandwiches! There is just something magically irresistible about that sweet juicy tomato and salty bacon combo that keeps you coming back for more. After enjoying a few regular BLTs it was time to try something a little different and I knew just what I wanted to do, to try adding some bacon jam to a BLT. The bacon jam is just packed with umami and flavour and I figured that you could not go wrong adding even more bacon to a BLT and I was right; these bacon jam BLTs are out of this world good! Feel free to add a little mayo to the BLT or since its summer, how about some basil mayo?

One of my favourite things about summer is all of the fresh corn on the cob and for the last few weeks I have been picking up a half a dozen or more ears every week! I recently came across the idea of a shrimp and corn chowder on Bev Cooks and I immediately took it as an excuse to update my dusty old corn chowder recipe and to add some succulent shrimp to it! Over the last few years I have picked up a few tricks to getting more flavour into soups like this and I seized the opportunity to do so with this new recipe for a shrimp and corn chowder!

Bacon Jam Crostini with Melted Brie and Roasted Tomatoes

So far I have brought my bacon jam out for breakfast, simply on toast, and for lunch in the form of a bacon jam and avocado grilled cheese sandwich with fried egg and now it was time to show it off at a party in the form of an appetizer! Ever since I made the bacon jam I had been thinking about how well bacon and tomatoes go together and I wanted to use them together in some way. With all of the flavour that the bacon jam is packing a regular old tomato might be a bit scared so I decided to fortify the tomato by roasting it and building up its flavour to match. In order to bring the bacon jam and roast tomatoes together I placed them on some bread to make crostini but there was one more guest that had yet to arrive, the cheese. Once the bacon jam had been spread out over the bread I added some brie and after a quick visit to the tanning salon, I mean under the broiler, the brie was all melted, ooey and gooey and ready to party! With the addition of a peppery arugula garnish everything was set and it promised to be a tasty party indeed!

Crispy Baked Portobello Mushroom Fries
I am a big fan of fries and an even bigger fan of mushrooms so when I came across the idea of combining the two to make mushrooms fries I was immediately sold and just had to make them! The mushrooms are turned into 'fries' by slicing portobellos, coating them with panko bread crumbs and baking them until golden brown and crispy. Yes, mushroom fries really are as easy to make as they sound and it is a good thing because they are so amazingly good and frighteningly addictive! I practically inhaled the first batch and given that they are baked rather than fried, I don't feel quite so bad.

Bacon Jam and Avocado Grilled Cheese Sandwich

Of all the ideas that were running through my head about how to use the first of the bacon jam, the one that captured my imagination the most was of course a bacon jam grilled cheese sandwich! (Raise your hand if you knew this was coming.) Since bacon goes so well with cool and creamy avocados they were the obvious companion to the bacon jam in the grilled cheese sandwich but I wanted to add one more thing. With the word jam in the title and the bacon and avocado combo I kept thinking about breakfast sandwiches for some reason. The breakfast sandwich idea made me realize that this was the perfect opportunity to try something that I have been wanting to try for a long time, adding a fried egg to the inside of a grilled cheese sandwich!

If you like Mexican corn on the cob, elote, then you are going to love esquites which is essentially elote but served in a bowl, only better! This year I have been enjoying using my cast iron skillet to 'roast' corn until the kernels char and caramelize which intensifies their sweetness making them even more irresistible! When I came across the idea of esquites where the corn is roasted in this way I immediately knew that it would be amazing! This salad has it all with the sweet caramelized corn, the salty cheese, the sour lime juice and the jalapeno heat and it is all held together with garlicky mayonnaise!
